Southern Okie Gourmet Apple Spread Potato Cakes

  • 1½ cups leftover mashed potatoes
  • ¼ cup all purpose flour
  • 1 egg


  1. Mix ingredients.
  2. Heat frying pan over medium-high. Coat pan with olive oil.
  3. Drop pancakes into pan (any size you'd like).
  4. Flip pancakes when the edges start to brown. Cook until golden brown.
  5. Serve immediately and top with Southern Okie Gourmet Apple Spread.
