Southern Okie Gourmet Pumpkin Chicken Chili

1 ½ lb. chicken breast or tenders

2 cans white navy beans (14oz), drained and rinsed

1 can diced tomatoes (14oz)

1 can whole kernel corn (14oz), drained

1 jar Southern Okie Gourmet Pumpkin Spread (9oz)

2 cups chicken broth

1 onion, diced

5 cloves garlic, minced

1 package chili seasoning

2 tbsp. hot sauce

1 tsp. salt

1 tsp. pepper

2 tbsp. fresh cilantro, chopped

Add tomatoes, chicken broth and pumpkin spread to crockpot.  Whisk until well combined; add onion, garlic, chili seasoning, hot sauce, salt and pepper. Add chicken, beans and corn. Cook 4-5 hours on high or 6-8 hours on low.

When ready to serve remove chicken and chop into bite-size pieces or shred with fork. Add back to pot, stir in cilantro and serve with sour cream, shredded cheddar, green onions, guacamole and/or tortilla chips.
