Southern Okie Gourmet Pumpkin Soup

Ingredients:

¼ cup butter

1 small onion, chopped

1 garlic clove, chopped

1 (14.5 ounce) can chicken broth

½ cup water

½ tsp. salt

¼ tsp. pepper

1 jar of Southern Okie Gourmet Pumpkin Spread

1-cup heavy cream

Directions:

Melt butter in 3-quart saucepan.  Add onion and garlic; cover over medium heat until onions are softened (1 to 2 minutes).  Add broth, water, salt and pepper; bring to a boil, stirring occasionally.  Reduce heat to low for 15 minutes.  Stir in Southern Okie Gourmet Pumpkin Spread and heavy cream.  Cook, stirring occasionally, for 5 minutes.  Remove from heat.

Transfer mixture to food processor or 5-cup blender (in batches, if necessary).  Cover; process until smooth.  Return mixture to saucepan and serve warm.
